Apple Pomegranate Salad w/ Blue Cheese and Shallots

A lovely crispy, nutty and cheesy salad that will catch your taste buds by surprise! It features our Herbes de Provence Olive Oil and Pomegranate Quince White Balsamic for the perfect combination of savoury and sweet. We used red leaf lettuce but any greens will do and you can substitute goat cheese or feta if you’re not a fan of blue cheese. Great on it’s own, or a side to chicken or pork!

Peppery Apple & Candied Pecan Salad w/ Cinnamon Pear Balsamic

Peppery Apple & Candied Pecan Salad w/ Cinnamon Pear Balsamic

Ingredients

4 cups arugula 

4 cups baby spinach 

1 apple, sliced thin (I like ambrosia)

1 cup candied pecans or walnuts (see below)

3/4 cup crumbled feta (or 1/2 cup crumbled blue cheese)

1/4 cup thinly sliced red onion

Dressing

2 tbsp NOOC Cinnamon Pear Dark Balsamic (or Vermont Maple works too!)

2 tbsp NOOC Madagascar Black Pepper Olive Oil

1 tsp dijon mustard

Salt & Pepper to taste

Shake dressing in a small jar and toss with salad ingredients!

Candied Nuts

1 cup unsalted raw nuts

3 tbsp white or raw sugar

2 tbsp water

In a nonstick frying pan on med high heat, dissolve sugar in water .  Add nuts and toss to evenly coat.  Once water has evaporated, turn down heat to medium low and stir constantly until nuts are browning and caramelized.  *do not leave unattended as they will burn easily!

Wendy's Olive Wood Smoked & Sicilian Lemon Salad

Featuring our Olive Wood Smoked Olive Oil & Sicilian Lemon White Balsamic this easy salad is satisfying and healthy!   We added hardboiled egg for some extra protein but it's just as good with out it.  Also great with chicken or tofu!  Ingredient quantities vary depending on the size of the salad but always mix Olive Oil and Balsamic 1:1 for a perfect dressing.

Ingredients
1 part NOOC Olive Wood Smoked Olive Oil
1 part NOOC Sicilian Lemon White Balsamic
Spinach
Arugula
Red apple, diced (ambrosia is the best!)
Avocado, diced
Red onion, minced
Parmesan cheese, finely grated
Dried cranberries (optional)
Hard boiled egg (optional)
Salt & Pepper, to taste
Directions
Use about one handful of greens per person and desired amount of toppings.  Mix
Olive Wood Smoked Olive Oil & Sicilian Lemon White Balsamic 50/50 (about 1 tbsp each per serving).

Honey-Ginger Sesame Slaw

So easy, so healthy, soooo good! 

Ingredients:

1/2 a head of cabbage-shredded & 2 carrots-grated (or 1 bag pre-cut coleslaw, kale slaw or broccoli slaw)

4 tbsp NOOC Japanese Toasted Sesame Oil

4 tbsp NOOC Honey-Ginger White Balsamic

2-4 tbsp Mayo or Plain yogurt (totally optional!)

Freshly ground pepper

 

Directions

Stir everything but the coleslaw in a mixing bowl with a fork until it begins to emulsify (blend). Add the slaw, toss, let sit for 10 minutes or longer. Toss again and serve. That’s it!

If you like some heat add 1 tbsp of NOOC Baklouti Green Chile Olive Oil.  Or try it NOOC Persian Lime or Blood Orange Olive Oil instead of the Toasted Sesame Oil

Best Caesar Salad - Ever!

Seriously, it's the best.  And the beautiful thing is that you can simply just use this combination of 4 NOOC oils and vinegars for a super easy, dairy-free and vegan Caesar dressing.  I just can't help myself from indulging in all the other "bad" stuff 'cause it's just sooooo good (and because apparently I like to do stuff the hard way LOL).  Either way, you've just made your Caesar dressing next level and way healthier than the creamy and preservative filled store-bought alternatives!  Feel free to substitute real lemon juice for 1/2 the Sicilian Lemon Balsamic if you like it less sweet and more tart.

Ingredients

¼ c (60ml) NOOC Eureka Lemon Fused Olive Oil
¼ c (60ml) NOOC Garlic Olive Oil
¼ c (60ml) NOOC Sicilian Lemon White Balsamic Vinegar
¼ c (60ml) NOOC Neapolitan Herb Dark Balsamic
1-2 cloves garlic (optional-the Garlic Olive Oil is enough if you just want a mild garlic flavour)
1/4 c finely grated parmesan cheese
1 tsp Dijon mustard
1 inch of anchovy paste or one anchovy (a tsp of capers is a good vegetarian substitute)
1 egg (I use raw but you can coddle it if you prefer, or no egg at all!)
2 strips crispy bacon, cut small or to your preferred size

 

Directions

Put all ingredients in a blender or bullet, blend thoroughly.  Toss with romaine, bacon bits, grated parmesan, croutons and appox. 1 tsp of dressing per person (go lighter at first, you will be surprised how far it goes once you toss it!  You can always add more.
 

Assembling the salad:

In a large bowl, combine romaine lettuce washed, dried and chopped into bite-size pieces (1 big handful per person), bacon bits, a handful of finely grated parmesan cheese, croutons. and about 1 tbsp dressing per person (give or take, depending on your taste)
