Ingredients
-
3 tbsp Basil Olive Oil
-
2 tbsp Cranberry Pear White Balsamic
-
1 1/2 cups (340g) Farfalle Pasta
-
1 cup Fresh Chopped Basil
-
1 cup Dried Cranberries
-
1 Onion (julienne cut)
-
1/2 cup Feta Cheese, or Goat Cheese (cubed)
-
Salt and Pepper (to taste)
-
Cashews or Pecans for garnish (optional)
-
Grilled Chicken (optional)
Directions
Caramelize the Onion: In a large pan, heat 1 tbsp of Basil Olive Oil over medium heat. Add the julienned onion and cook, stirring occasionally, until the onions are golden and caramelized. When almost done, add a splash of Cranberry Pear White Balsamic to finish the caramelization, allowing the balsamic to cook down.
Cook the Pasta: While the onions are cooking, bring a pot of salted water to a boil. Cook the Farfalle Pasta according to the package directions. Once cooked, drain and set aside.
Assemble the Dish: In a large mixing bowl, combine the cooked pasta, caramelized onions, chopped basil, dried cranberries, cheese, and optional grilled chicken. Add the remaining Basil Olive Oil and Cranberry Pear White Balsamic. Season with salt and pepper to taste.
Mix and Serve: Gently toss everything together until evenly coated. If desired, garnish with cashews or pecans for added crunch. Serve immediately and enjoy!
Recipe Note
Add some grilled chicken for protein!
