This Sweet & Sour Chicken features the sweet and tangy flavours of our Apricot Balsamic Vinegar paired with the rich taste of our Garlic Infused Olive Oil. This combination creates a delicious Sweet & Sour flavour, without the excessive processed sugars and preservatives of the grocery-store varieties. This recipe calls for tender chicken bites that are simmered with dried apricots and thyme, creating a beautiful balance of savoury and sweet—perfect for serving over rice.
2 tbsp Garlic Olive Oil
¼ cup Apricot Balsamic Vinegar
½ cup apricot preserves
Heat the Oil: In a large skillet with a lid, heat Garlic Olive Oil over medium-high heat.
Add Onion (3 minutes): Stir in the chopped onion and cook for an additional 3 minutes. (Optional: Add some fresh chopped garlic for extra flavour.)
For extra flavour, garnish with fresh thyme or parsley before serving.
This dish pairs well with jasmine rice, couscous, or roast potatoes.
