A fresh, herby chicken salad with a creamy, tangy vinaigrette made with Wild Dill Infused Olive Oil and Grapefruit White Balsamic. Perfect for sandwiches, wraps, or served over a bed of greens!

Ingredients

3 tbsp Wild Dill Infused Olive Oil
2 tbsp Grapefruit White Balsamic
2 chicken breasts, cooked and cut into bite-sized pieces
½ red onion, chopped
½ cup celery, chopped
⅓ cup Greek yogurt or mayonnaise
2 tbsp fresh dill, chopped
2 tbsp fresh parsley, chopped
1 tbsp Dijon mustard
1 tbsp lemon juice
Salt and pepper to taste

Directions

In a small bowl, mix Wild Dill Infused Olive Oil, Grapefruit White Balsamic, Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, salt, and pepper. Stir well.
In a large bowl, combine cooked chicken, red onion, celery, dill, and parsley.
Pour the vinaigrette over the chicken mixture and toss until well combined.
Serve on bread, in a wrap, or as a side with pasta, potato, or corn salad.
